A bowl does not need six toppings. Sometimes one good contrast is the whole point.

Something crisp

Cucumber gives you a cool, crisp bite; toast brings a different kind of crunch. Slice or toast it just before serving. These are pairing suggestions, not ways to rescue food that has been mishandled.

Something bright

A little scallion, a squeeze of citrus or a spoonful of your preferred kimchi changes the direction. Add gradually so the meal tastes like something you chose, not a cupboard clearance event.

Something familiar

Avocado, rice or noodles can provide a familiar base. Taste before using a complete seasoning sachet. Check labels for soy, wheat, sesame, fish and any other allergens relevant to you.

Make a two-line note

“Too much sauce, loved the cucumber” is enough. Your own notes are more useful than a rule about the one correct way to enjoy natto.
