Small, crisp bites for a lunch that needs a little contrast.

A small invitation

Use the amount of natto that suits your taste. Set out the other ingredients first, then assemble just before eating. The serving controls scale ingredient quantities, not food-safety instructions or cooking times.

Make it your own

Contains soy and sesame. This is an assembled ready-to-eat dish, not a fermentation or preservation method.

Here’s how.

  1. Wash and slice the cucumber.
  2. Prepare the natto according to its package and place it in a small serving bowl.
  3. Add cucumber, vinegar and a little seasoning, adjusting to taste.
  4. Finish with sesame and scallions. Serve promptly and keep perishable ingredients cold as directed.
