Will any rice cooker or yogurt maker work?
Only if it can meet the chosen method’s conditions and its manufacturer permits that use. Check actual controls and measurements, not an appliance’s general category name.
Can I make natto at home?

What fermentation temperature should I use?
Use the exact time and temperature requirements for your selected starter and method. There is no single temperature here that safely covers every culture, quantity and appliance.
How long should I ferment it?
Follow the chosen starter’s current instructions, including preparation, fermentation, cooling and storage. A typical duration from another recipe is not a substitute for that method.
