GOOD BEANS. BRIGHTER DAYS.

A bigger family of fermented foods.

Related does not mean identical. Each food deserves its own name, context and preparation traditions.

For the first-bite curious. And the already obsessed.

Three starting points.

Kinema in Eastern Himalayan food traditions, cheonggukjang in Korea, and thua nao in Burmese and northern Thai food cultures belong to a wider conversation about fermented soybeans.

Shared themes, distinct foods

The cited literature describes a range of plant-based alkaline fermented foods. Similar ingredients or microbial groups do not erase differences in flavor, technique, customary use or cultural ownership.

A source is a starting point

Our research entry looks at one analysis of kinema. It is not a clinical trial, and it is not a recipe for recreating a regional food safely at home.

What we want to add next

Contributions from people who prepare and know these foods, with permission, accurate names and identified sources. We will not use a stock portrait to invent a producer interview.

Keep following the food.
